Colour-Coded Chopping Boards: the System That Prevents Cross-Contamination
Cross-contamination is how a perfectly cooked chicken ends up making someone ill — not from the chicken, but from the board that had raw chicken on it an hour earlier and now has the salad on it. Germs travel from raw to ready-to-eat food on surfaces, hands, cloths and equipment. The single most widely used control for this in commercial kitchens is the colour-coded chopping board system.

Why cross-contamination is the quiet killer
Most food poisoning isn't from food that was undercooked — it's from ready-to-eat food that picked up germs from a raw product without being cooked afterwards. Raw meat, poultry, fish and unwashed vegetables carry bacteria that a cooking step would kill. If those bacteria reach food that won't be cooked (salad, cooked meat, bread, garnishes), there's no kill step left.
The board is the classic transfer point, but so are knives, hands, cloths and work surfaces. The colour system tackles the board directly and reminds staff about the rest.
The standard colours
There is no single law that fixes the colours, but one scheme is used so widely across commercial kitchens and training that it functions as the de facto standard. When in doubt, follow the chart your board supplier prints:
- Red — raw meat (beef, lamb, pork, mince)
- Blue — raw fish and seafood
- Green — salads, fruit and vegetables (fresh produce, especially anything served raw)
- Yellow — cooked and ready-to-eat meats (cooked poultry, sliced cooked meats)
- White — bakery and dairy (bread, cheese, pastry)
- Brown — root vegetables (unwashed vegetables that carry soil)
Some kitchens add purple for allergen-free prep (see our allergen note below). The exact set matters less than this rule: one colour, one food group, no exceptions, ever.
The rules that make it work
The colours only protect you if the behaviour behind them holds:
- Raw and ready-to-eat never share a board. This is the whole point. Raw meat boards (red) and anything served without further cooking (green, yellow, white) are kept strictly apart.
- The knife follows the board. A red-board knife doesn't touch the green board. Colour-coded knives exist for exactly this reason.
- Boards are washed and sanitised between tasks, not just rinsed. Colour coding is not a substitute for cleaning — it's a layer on top of it.
- Damaged boards are replaced. Deep knife grooves harbour bacteria and can't be sanitised properly. A board you can't get clean is a board you throw out.
- Boards are stored so they don't touch. Stacked wet boards re-contaminate each other. A rack that lets them drain and air-dry upright is the answer.
Allergens: the purple board
Cross-contact with allergens (a trace of nut on a "nut-free" dish) can be as dangerous to an allergic customer as bacteria are to everyone. Many kitchens add a purple board reserved for allergen-free prep — used only for dishes being made free of a declared allergen, with its own knife, and cleaned first, away from the main prep flow. If you cater for allergen-free requests, a dedicated colour is the simplest physical control.
Setting it up so staff actually follow it
A system that exists only in a folder fails. To make it stick:
- Buy the full colour set plus a labelled storage rack — a missing red board means someone reaches for green.
- Mount the colour chart at the prep station, in the language your team reads, with pictures. Every board supplier provides one.
- Train on day one, retrain on the spot. A quiet "wrong board — red is for raw meat" in the moment beats an annual lecture.
- Inspect it. Check boards for deep grooves weekly; check the rack is being used; make it part of the opening/closing checklist.
- Replace, don't ration. Boards are cheap relative to the risk. A kitchen that never replaces boards is signalling the system doesn't matter.

Frequently asked questions
Is a colour-coded board system legally required in South Africa?
Regulation R638 requires food premises to prevent contamination and to keep equipment clean and in good repair — it doesn't mandate a specific colour chart. But colour coding is the universally recognised way of demonstrating that raw and ready-to-eat foods are kept apart, and inspectors expect to see it. It's the easiest system to follow and to prove.
Can I use the same board if I wash it between raw and cooked food?
You should avoid it in a commercial kitchen. Washing between every task is slow and, in a rush, it's the step that gets skipped. Separate coloured boards remove the judgement call entirely — which is the point. The system exists precisely so that a busy worker doesn't have to decide.
How often should boards be replaced?
There's no fixed calendar — replace a board when it's heavily scored, warped, or no longer comes fully clean. Deep grooves trap bacteria that normal washing can't reach. Inspect them weekly and treat them as a consumable, not a permanent fixture.
Does the colour system replace cleaning and sanitising?
No. Boards must still be washed and sanitised between tasks and at the end of service. Colour coding prevents the wrong board being used for the wrong food; it doesn't clean the board. The two work together.
