Bain Marie Buying Guide: Wet vs Dry Heat, Sizes and Hot Holding

The bain marie is the workhorse of hot holding in South African delis, takeaways, cafeterias and catered events. It does one job — keeping cooked food hot and safe — and it does it poorly if you buy the wrong type or run it wrong.

This guide covers the decisions that actually matter: wet vs dry heat, countertop vs floor-standing, gastronorm configuration, and the operating discipline that keeps you on the right side of Regulation R638 (which requires hot-held food to stay at 60 °C or above).

Wet heat vs dry heat — the first decision

Wet bain maries

A wet unit has a water well: you fill it with water, and elements heat the water, which heats the pans sitting in it.

  • Gentle, even heat. Water surrounds the pan, so food heats evenly with no hot spots.
  • Forgiving. Sauces, curries, stews, gravies and dairy-based dishes hold well without scorching or skinning.
  • Needs water discipline. Fill to the level line, top up as it evaporates, and drain for cleaning. Running a wet unit dry kills elements.
  • Slightly slower to come up to temperature, and humid (which keeps moist food moist).

Dry bain maries

A dry unit heats the pan directly — no water — usually with elements or a heated shelf under the pan.

  • Fast and no water handling. Plug in, heat up, go.
  • Better for fried and crispy food — chips, breaded items, roasted meats — where steam from a water well would make the product soggy.
  • Less forgiving. Food in direct contact with the pan base can scorch or dry out; sauces and stews need stirring and sometimes a little added liquid.
  • Typically used with special dry-heat-compatible pans — check the unit's manual; some dry units still want a little water in the well underneath.

Most general-purpose delis and caterers are better served by a wet unit because wet holding covers more menu types and is gentler on food quality.

Countertop vs floor-standing

Countertop units (typically 1 to 3 pan positions) suit: cafés, small delis, serving lines on an existing counter, market stalls, and caterers who transport equipment to venues.

Floor-standing units (cabinet style, often 2–4 wells plus cupboard space underneath) suit: high-volume takeaways, cafeteria lines, hotel buffets, and any operation holding many dishes at once. The cupboard below keeps spare pans or dry stores at hand — and note anything stored there sits near heat.

A third category is mobile/buffet units on castors, often with induction or electric elements, used for events. If you cater off-site, check power draw against what venues can supply, and how the unit travels (drain wet units before transport — every time).

Gastronorm configuration

Bain marie wells are sized for gastronorm pans (see our GN sizes guide). Typical configurations:

  • 1 × GN 1/1 — one big dish (bulk curry, stew).
  • 2 × GN 1/2 — two dishes side by side.
  • 3 × GN 1/3 or 4–6 × GN 1/6 — multiple smaller items (sides, sauces, veg).
  • Many units ship with adjustable dividers so one well can be reconfigured between, say, one 1/1, two 1/2s, or three 1/3s.

Buy pans to match the well depth: a 150 mm-deep pan needs a deep well; standard wells typically suit 100 mm pans. Pans too deep for the well won't sit flush and hold temperature poorly.

Power, thermostats and controls

  • Most countertop units run on standard single-phase power; larger floor-standing and multi-well units may draw enough to need a dedicated circuit. Check the rating plate against your supply and ask an electrician if unsure.
  • You want thermostatic control with a readable dial or digital display — and regardless of what the dial says, verify actual food temperature with a probe thermometer. The dial tells you the well temperature; the probe tells you whether the food is legal.
  • Look for a drain tap on wet units — draining a full water well by tilting the unit is a burn and a mess.

Operating discipline (this is where compliance lives)

A bain marie holds temperature; it does not cook or reheat. Running the rules:

  1. Preheat the unit (and the water, on wet units) before food goes in — 15–30 minutes depending on the unit.
  2. Food goes in already hot — cooked to service temperature (piping hot), never cold or lukewarm. Putting a fridge-cold pan into a bain marie parks the food in the bacterial danger zone for hours while it slowly warms.
  3. Reheat separately and thoroughly (on the stove, in an oven, or with a microwave for small portions) to steaming hot, then transfer to the bain marie.
  4. Probe-check and log at least every two hours: food must be 60 °C or above. Below that, reheat once to steaming hot or discard.
  5. Keep lids on between service to hold temperature and keep the food protected.
  6. Don't top up a half-empty pan with fresh food ("banking") — the new food cools the old and you lose track of batch times. Empty, clean, refill with a fresh hot batch.
  7. Discard at end of service. Held food generally should not be cooled down, refrigerated and re-served the next day — repeated temperature abuse is exactly how food poisoning happens. Some operators re-chill held food within strict time limits, but the safe default for a small operation is: held food is single-service.

Load-shedding note

A bain marie without power loses holding temperature fast (water wells hold heat longer than dry units — another point for wet). During extended outages, food that drops below 60 °C for more than a short window should be reheated to steaming hot when power returns or discarded. If outages are routine in your area, factor them into how much you batch, and keep a probe thermometer log so you can show what happened and when.

Cleaning and maintenance

  • Wet units: drain and wipe the well daily; descale regularly (water hardness varies wildly across SA — heavy scale insulates elements and causes overheating and failure). Use a descaler suited to food equipment.
  • Dry units: wipe spills immediately — carbonised food on elements or the heated shelf is a fire risk and a contamination source.
  • Pans and lids: wash in the dishwasher or three-sink method after every service.
  • Check element condition and thermostat calibration monthly; a unit that can no longer hold 60 °C is a compliance failure waiting for an inspection.

Buying checklist

  1. Wet or dry — decided by your menu (wet = most versatile).
  2. Pan configuration — count your typical simultaneous dishes; prefer adjustable dividers.
  3. Well depth matches your GN pan depths.
  4. Power draw matches your supply (dedicated circuit for big units).
  5. Thermostatic control + drain tap (wet units).
  6. Stainless construction in food zones — cleanable, durable, R638-friendly.
  7. Probe thermometer (separate purchase if not included) and a logging sheet from day one.
  8. Spares availability: elements, thermostats and taps are wear items — ask the supplier what they stock before you buy.

Frequently asked questions

Can I reheat food in a bain marie?

Not safely as a routine. A bain marie is designed to hold already-hot food. Reheating cold food in one keeps it in the danger zone far too long. Reheat fast and thoroughly by other means, then transfer.

How often must I check the temperature?

At minimum every two hours, logged with a probe thermometer, per common food-safety practice and R638's 60 °C hot-holding requirement. Check more often during heavy service or load-shedding.

Wet or dry for a takeaway that does both curries and chips?

Curries need wet; chips are better under dry heat lamps than in a bain marie. The usual setup is a wet bain marie for the wet dishes plus a heat lamp or dry display for fried items — not one unit trying to do both.

Why is my food drying out even with a lid?

Usually a dry well running too hot, food held too long, or a wet unit low on water (the pan then sits partly above the hot zone and bakes). Check water level, thermostat setting, and how long batches have been held.
