Choosing a Commercial Meat Mincer: Sizing, Plates and Duty Cycles

Mincers are deceptively simple-looking machines, and buying the wrong size is a common (and loud) mistake: an undersized unit overheats and jams through a Saturday rush, while an oversized one sits idle, costs more to run, and is harder to clean.

This guide explains how mincers are sized, what the numbers mean, how duty cycle and power affect your choice, and the maintenance that keeps the head and auger alive.

How mincers are sized: the "number" system

Commercial mincers follow a long-standing sizing convention — numbers like No. 8, No. 12, No. 22, No. 32, No. 42 — which correspond to the diameter of the grinder head and plates. Bigger number = bigger head = bigger plates = more meat per pass.

Throughput figures quoted by manufacturers (kg/hour) assume clean, trimmed, chilled product fed steadily — treat them as ideal-case numbers and buy with headroom.

Duty cycle: the spec that gets ignored

"Duty cycle" describes how hard a machine can work before it needs to rest:

  • Intermittent duty (typical of smaller, cheaper units): run a few minutes, rest a few minutes. Fine for a café mincing a couple of kilos a week; miserable for a Saturday-morning butchery queue.
  • Continuous/heavy duty (bigger motors, better gearboxes, often three-phase): built to run through long sessions.

Match the machine to your busiest realistic hour, not your average day. A mincer that keeps up at 11:00 on a Saturday pays for the upgrade; one that trips thermals or strips gears on that same Saturday costs you sales, product and repairs.

Motor and power

  • Smaller units run on standard single-phase supply.
  • Bigger continuous-duty machines often want three-phase — check your premises' supply before buying. Retrofitting three-phase is an electrician's job and a real cost.
  • Look for thermal overload protection — it saves the motor by cutting out before it burns, but if you're tripping it regularly, the machine is undersized for your work.

Plates and knives: where the mince actually happens

The head holds a knife (cross blade) against a plate (die) with holes of a chosen diameter. The knife spins, the plate stays still, and product is sheared through the holes.

  • Hole size = mince texture. Common plate sizes run from fine (~3 mm, boerewors, fine sausage) through medium (~4.5–6 mm, standard mince) to coarse (~8–12 mm, chili, coarse sausage).
  • Most shops keep two or three plates and swap per product.
  • Knife and plate wear together — a worn knife against a worn plate smears and mashes meat instead of cutting it (warm, pasty mince = quality and food-safety trouble, since smeared meat heats up). Inspect both regularly; sharpen/replace as a set or per the supplier's guidance.
  • Keep a spare knife and a spare plate — a chipped knife mid-Saturday is a shutdown if you have no spare.

Practical buying checklist

  1. Volume: your busiest hour in kg. Buy a size rated comfortably above it.
  2. Duty cycle: continuous if you mince in sessions; intermittent only if genuinely occasional.
  3. Power supply: single vs three-phase at your premises — confirm before ordering.
  4. Plate sizes included and their cost to buy extras.
  5. Head material and build: all-metal gears; stainless contact parts — cleanable per R638, no painted surfaces in the product zone.
  6. Strip-down tooling: can you dismantle the head (auger, knife, plate, ring) without tools, or nearly? Fast strip-down = it actually gets cleaned properly every day.
  7. Spares availability: knives, plates, augers, rings — common wear items. Ask the supplier what they stock.
  8. Safety: hopper guard/stomper supplied; the stomper is not optional — hands never go near the auger.

Feeding and operating rules that protect the machine

  • Chill the product (and ideally the head parts) before mincing — cold fat cuts cleanly; warm fat smears and loads the motor.
  • Trim properly: sinew, silverskin and gristle wrap around the auger and choke the head. Cut product into strips/blocks that feed easily.
  • Never push with hands — use the stomper, always.
  • Don't force-feed — let the auger draw product at its own pace.
  • If the machine labours or the mince comes out smeared: stop, strip, inspect knife and plate. Continuing to run a dull set warms the meat and wears the gearbox.

Cleaning: daily, without fail

Mincers hold protein-rich residue in exactly the places bacteria thrive — the auger flights, behind the knife, inside the head. Daily routine:

  1. Unplug.
  2. Strip the head: ring, plate, knife, auger; remove the hopper if it detaches.
  3. Wash all parts in hot soapy water (or dishwasher if rated), rinse, sanitise, air-dry fully.
  4. Wipe the body — never hose a mincer.
  5. Once dry, lightly oil the knife, plate and auger with food-grade oil before storage to prevent surface rust (carbon-steel parts rust overnight if stored damp).
  6. Log the clean.

Weekly: check the head seal/gasket, the drive coupling wear, and the condition of knife edge and plate holes.

Frequently asked questions

Can one mincer do both fine sausage mince and coarse chili mince?

Yes — same machine, swap the plate. That's exactly why the plate system exists. Keep a fine plate (around 3 mm) and a coarse plate (8 mm+) and change between products, cleaning the head at each change (allergen and cross-contamination control as much as texture).

Why does my mince come out warm and pasty?

Almost always one of: a dull knife/plate set smearing instead of shearing, warm product or warm head, or overfeeding. Chill everything, sharpen or replace knife and plate as a set, and feed at the machine's own pace. Warm smeared mince is also a food-safety issue — it's been held in the danger zone and worked hard getting there.

Is a bigger mincer harder to clean?

Physically larger parts, yes — more mass to wash and dry. But a properly sized machine used within its duty gets cleaned the same way and just as often. The bigger risk to hygiene is an undersized machine run back-to-back at high temperature, which also makes residue bake onto parts.

How often do knives and plates need replacing?

Volume-dependent. Inspect weekly for nicks, rounding of the knife edge, and ovalled/worn plate holes. A butcher mincing daily might get many months from a set with regular inspection and rotation (some shops rotate two sets); light users get far longer. The moment mince quality drops, don't argue with it — service the set.
