- Hold hot before dispatch. Food waiting for a driver should be held at safe hot-holding temperature, not sitting on the pass cooling down. The danger zone clock starts the moment it drops below safe holding temperature.
- Insulated carriers are not optional. A bag or box that holds heat buys time; a thin bag in a cold car doesn't. Hot-food delivery packaging should be insulated and closed.
- Short journeys only. The longer the trip, the more temperature is lost. Build your delivery radius around how long your food stays safely hot, not just how far a driver will go.
- Don't reheat to "fix" a cold delivery. If hot food has cooled into the danger zone for too long, reheating it later doesn't reliably make it safe — some bacteria leave toxins that heat doesn't destroy. Time and temperature control up front is the control.
Cold food: keep the cold chain unbroken
Cold items — salads, desserts, anything with dairy, cooked meats served cold — must stay cold from your fridge to the customer's fridge:
- Start cold. Cold food should go into the delivery container straight from refrigeration, at safe fridge temperature.
- Insulated + coolant for cold items. Chilled bags or boxes with ice/gel packs hold the cold chain through the journey. Ambient packaging on a warm day is a broken cold chain.
- Separate hot and cold. Hot and cold items in the same uninsulated bag warm the cold and cool the hot — a worst of both. Pack them separately.
- Frozen stays frozen. Frozen desserts or ice cream need proper insulated packaging with enough coolant for the full journey plus a margin.
Packaging is a temperature-control tool, not just branding
The right packaging is part of your food-safety system:

- Time the journey. Know how long deliveries actually take at your busiest times, not your quietest. If journeys regularly run long, tighten the radius or upgrade the packaging.
- Train the handover. Whoever packs the order owns the last temperature check before it leaves.
