Commercial Ice Machine Care: Cleaning, Descaling and Keeping Ice Safe
Ice is food. It's easy to forget — it comes out of a machine, not a pan — but ice goes straight into drinks and onto food, and a dirty ice machine contaminates everything it makes. Health inspectors know this, which is why the ice machine is one of the first things they open.
Ice machines are also among the most neglected pieces of equipment in a commercial kitchen: out of the way, always running, and ignored until they stop. This guide covers the cleaning and descaling routine, the hygiene rules for handling ice, and the warning signs before a breakdown.
Why ice machines get dirty faster than you think
An ice machine is a warm, wet, dark box — close to ideal conditions for mould, slime and bacteria. The water it freezes carries minerals that build up as scale on the evaporator and water system. The result, left alone: slimy or cloudy ice, off tastes and smells, slow production, and eventually a failed machine.
Two separate problems need two separate routines:
- Cleaning removes slime, mould, bacteria and food debris from the bin, the door, the scoop and the interior surfaces.
- Descaling removes the mineral scale that builds up on the water system and evaporator — how often depends on how hard your water is.
Both are needed. A machine can be clean of slime and still scaled up, and vice versa.
The routine that keeps ice safe
Daily / every service: - Keep the bin door or lid closed — an open bin is an open invitation to contamination. - Use the scoop, never hands or a glass. Store the scoop outside the ice, in a clean holder. - Wipe the door, handle and exterior.
Weekly: - Empty the bin, wash it and the scoop, and sanitise before refilling. - Wipe accessible interior surfaces. - Check the ice: it should be clear, hard and odourless.
Monthly / periodic: - Full clean and descale of the water system and evaporator, following the manufacturer's process and a food-safe descaling solution. Frequency depends on water hardness — hard-water areas need it more often. - Check and clean or replace the water filter if fitted. - Inspect the door gasket and the drain for blockages.
Always follow the machine's own manual for the cleaning/descaling cycle and the chemicals it specifies — using the wrong chemical or concentration can damage the machine or contaminate the ice.
Hygiene rules for handling ice
Ice-handling is where most contamination actually happens:
- Scoop, never hands or glass. A glass used to scoop ice can chip into the bin — glass shards in ice are a serious physical hazard. Hands are worse.
- Store the scoop outside the ice, in a clean, dedicated holder — not buried in the ice where the handle becomes a contamination point.
- The ice bin is for ice only. Never use it to chill bottles, cans or food — the packaging contaminates the ice.
- Clean and sanitise the scoop and bin on the schedule above.
Warning signs before a breakdown
Catch these early and the fix is cheap; ignore them and it's a new machine:
- Slow production or small/hollow cubes — usually scale on the evaporator or a water-supply restriction. Descale before it gets worse.
- Cloudy, weak or off-tasting ice — cleaning overdue, or a water-quality issue (filter exhausted).
- Unusual noise — grinding, rattling or straining from the compressor or pump.
- Water leaks or pooling — blocked drain, failed pump or a split line.
- The machine cycling oddly or not harvesting — sensor or control issue.
