Spiral Mixer vs Planetary Mixer: Which Does Your Kitchen Need?
Ask a bakery or pizza operator which mixer to buy and you'll get strong opinions — usually because someone once tried to make bread dough in the wrong machine and learned the hard way.
Spiral and planetary mixers are both "commercial mixers," but they are engineered for different jobs. Buying the wrong one means a machine that struggles with your main product while the right one would have been cheaper to run, quieter, and better at it. The core mechanical difference
A spiral mixer has a stationary or slowly rotating bowl with a spiral shaped hook that corkscrews through the dough. The dough is stretched and folded gently and continuously — the same motion as skilled hand kneading, mechanised. Spiral mixers: yeast doughs
Spiral machines are dough specialists. Their action develops gluten efficiently and gently:

- Mixers are loud and they vibrate. Place on a solid floor, ideally anchored or on a stable bench, away from prep surfaces where vibration travels.
- Leave clearance around the bowl lift/head — you need room to get bowls in and out, and to attach the whisk safely.
